Food on Friday: Fresh Veggies Edition, February 26, 2016

I'm sharing an update on this week in food, and you guys! I am learning a lot and finding new ways to be creative without going over my budget. I have some new recipes I am excited to share with you today! But first, I'm curious: what do you spend on fresh veggies? I've been on a mission for the past few weeks to incorporate more veggies into my meals . Here in Maine, we have a pretty short growing season. I love buying fresh fruits and veggies in season, but that is just not possible year round! Thankfully the health food store I work at sells a lot of local produce, so I have a pretty good supply 9 months out of the year. But these 3 months of winter leave me with not a lot of local options, so I've been buying mostly organic produce in the meantime. I know the label "organic" gets thrown around a lot, and doesn't always mean much, but since I can't get local this seems like the next best option. One of the areas that I have recently been challenging myself in is the area of eating good, whole foods, and finding ways to save money while doing it. You may remember my introduction to this idea of cooking and saving for one back a while ago. It is a learning curve for sure! My goals when buying food for myself are:               1. Eat real, whole foods as much as possible               2. Spend the least amount of money possible               3. Adapt recipes for one person to eliminate as much waste as possible Those are attainable goals, right? ;) I know I still have a ways to go, but I really do enjoy finding the best ways to make those things happen. My Summer 2015 Budget

Early this summer, I sat down with my planner and set a weekly and monthly budget based on my expenses and income. I had never done this before, and really didn't know if I needed to. I was not in debt and didn't have issues with spending or saving. But having an actual plan and goal is important in every area of life, so I decided to see if my spending habits could benefit from a planned budget! I knew I wanted to be more intentional about my money and where it was going, but I wrote down some other reasons for this budget as well... ...Be able to give to special missions projects ...Save for a newer vehicle ...Start an emergency fund ...Plan for upcoming trips and vacations With these goals in mind, I wrote down my income and expenses and decided on the different categories I needed to budget for.
